
Almond milk is a staple in my home, I drink it almost every day! I mean homemade almond milk. Not the store-bought almond milk that contains suspicious ingredients that are not good for you. Homemade almond milk is what I add to my morning coffee to make it creamier. You too can make your own at home, saving on money and packaging. I will show you how simple it is and I promise that there are no live farm animals required!
Homemade almond milk tastes creamy and rich. And if you know me, I am famous for turning like a green monster if I don’t have my coffee with dairy-free milk first thing in the morning. You will need a handful of almonds to do this recipe. It’s straightforward. To get it right, you must use a high-speed blender that will be powerful enough to grind the almond perfectly. If you don’t have a high-speed blender, I would try with a food processor to grind the almonds the best you can and then mix the water and almond meal in a blender. But it won’t be as well mixed.
The secret of the recipe is the Vitamix Blender.
A couple of years ago, I bought a refurbished Vitamix. This is a costly high-speed blender, but I see it as an investment in our healthy diet. I was surprised to read that a gentleman from Cleveland created the Vitamix. He developed the machine so his family could get whole food prepared. He found out that he could have a healthier family by eating mainly plant-based diets that he could process in his Vitamix. This high-speed blender is working hard. I used mine multiple times a day. Even for my dogs, I squish leafy greens for them, and they love their green sauce! Anyway, I am disgressing from my main subject, almond milk, so let’s dig into it!
Why do I make almond milk from scratch?
I make almond milk every other day. One batch of four cups will last me two to three days. But I drink lots of matcha tea latte and chamomile moon tea! The mildly sweet and nutty taste of the homemade almond milk makes it ideal for almost anything—smoothies, coffee, homemade granola, cooking, and baking. I am making my homemade almond milk because cow’s milk is not an option since I am allergic to milk. This version is so much better than anything you can buy at the grocery store. To me, the store-bought option tastes more like almond-flavored water. As daunting as making almond milk from scratch may seem to someone who has never done it before, the process is surprisingly easy and fun. Let’s do it together!

How To Make Almond Milk
How to make your all-natural almond milk from scratch.
Plant-based milk never tasted so good.
Ingredients
- 1 cup of raw almonds
- Fresh water to soak the almonds
- 4 cups of filtered water to make the milk
Optional - if you like it sweeter
- 2 Medjool dates (pitted)
- A pinch of salt
- 1 teaspoon of vanilla extract
Instructions
Before going to bed, I soak my almonds this way:
- Place 1 cup of raw almonds in a 32 oz Mason Jar
- Add enough filtered water to fully cover them
- Let the jar sit on your countertop overnight
- In the morning, drain the almonds through a fine mesh strainer
- Rinse them well
Directions:
- Place the soaked almonds and the 4 cups of filtered water into the Vitamix container and secure the lid.
- Start the blender at its lowest speed, then quickly increase to its highest speed. Blend for 1 minute
- You now have to get rid of the leftover almond pulp by using your nut bag. Pouring the milk through a nut milk bag into a large bowl.
- And then squeeze to extract all of the almond milk.
Transfer milk to a jar or covered bottle and refrigerate. The almond milk will keep for up to 3-5 days, though it is best when fresh. Shake well before drinking, as it tends to separate.
Notes
Most recipes imply that you use dates to sweeten the homemade milk but feel free to try honey or maple syrup instead. To make vanilla almond milk, add vanilla extract or fresh vanilla bean.

Variation for a pitcher of chocolate almond milk

For 36 ounces of almond milk, add
- 4 tablespoons of unsweetened cocoa powder
- 8 teaspoons confectioners’ sugar
Blending with an immersion blender, spoon, or a small whisk. An immersion blender or a small whisk works best because they reduce the clumping of the cocoa powder.
Sweetheart Strawberry Milk recipe

Ingredients
- 3 cups of strawberries (frozen or not)
- 3 cups of almond milk
- 1 banana
- 1 tablespoon of maple syrup
Instructions
Add everything to your Vitamix. Blend to 10 for 1 minute or until full smoothness.
Enjoy!
A cup of almond matcha tea latte recipe

Ingredients
- 1 teaspoon matcha green tea powder
- 4 oz hot almost boiling water
- 8 oz almond milk
- sugar, honey, to taste
Instructions
- Place one teaspoon of matcha tea powder in a bowl.
- Pour hot water over matcha and whisk vigorously until frothy.
- Heat your almond milk on the stovetop and use a whisk to froth (or use an electric milk frother)
- Sweeten to taste with organic sugar.
- Enjoy!
What do you do with the leftover pulp?
Some people cook with it. I add mine to my compost bin.
How long does your almond milk will last?
The best homemade almond milk has no preservatives so you must immediately refrigerate it after making it. I find it works best in a glass jar so you can easily check for signs of spoilage. Your homemade almond milk generally stays fresh for about 3 to 5 days.
