
When the cold temperature starts to set in its time for some goodies that will warm your heart. I love to make these ginger cookies for my son. He may be all grown up but he still loves Mama’s cookies. I’ll make a batch for him and one for us!
You can make them plain or with the icing sugar.

Ginger cookies

Ginger cookies for fall
Ingredients
- 1 cup of brown sugar
- 3/4 cup vegetable oil
- 1/4 cup molasses
- 1 egg
- 2 cup of all purpose flower
- 2 teaspoon of bicarbonate sodium
- 1/4 teaspoon of salt
- 1/2 teaspoon of cloves
- 1 teaspoon of cinamon
- 1 teaspoon of ginger
Instructions
- start your oven at 375 F
- Mix everything in one bowl
- Chill the dough for 15 minutes in the fridge
- Generously flour a work surface, as well as your hands and the rolling pin. Roll out disc until 1/4-inch thick.
- Have fun with the shape of your choice
- Cook the cookies on a cookie sheet for 10-12 minutes

Notes
Sometimes i use chopped fresh ginger instead of powdered ginger. It gives more kick!

Can You Freeze Ginger Cookies?
Yes! You can freeze baked and unbaked cookies.
- To freeze the baked ginger cookies, Arrange the cooled cookies on a baking sheet. Freeze for three hours or up to overnight. Transfer the now-frozen cookies to a freezer-safe container. Wrap in at least one layer of foil for extra protection. Freeze for up to two months.
- To freeze the ginger cookie dough, Roll the dough into balls and place it on a parchment-lined baking sheet. Cover and freeze for about three hours or up to overnight. Transfer the now-frozen cookies to a zip-top bag or freezer-safe container. Wrap in at least one layer of foil for extra protection. Freeze for up to two months. When you’re ready to enjoy the cookies, thaw the dough in the fridge overnight. Roll the balls in sugar and bake according to the recipe.
