
Okay, I get it. It was not a turquoise sea from Costa Rica. But it still was the lovely Punderson State Park in Ohio in November. The fall colors are still painting a pleasing portrait. Regardless, my family and I had a beautiful weekend staying around and enjoying a walk on the beach . Being in the present moment, it feels always good!
You have to admit that there is something so calming about walking in a forest and listening to the water ripples by a lake or a river. I always cherish the sound of the water, it is music to my soul. Our state is well endowed with such magnificent parks nearby. Since we adopted Happy, we have walked them everyday. Our red girl had a big case of zoomies, especially around bedtime. In other words, she would get hyper, get bursts of energy and run in circles in the house. Consequently, we started to explore the parks around our house and bring the dogs along. And these parks are gorgeous. I think this is when I fell in love with my city, my county and my state. Now, I walk for myself. It improves my mental health and in the process, I am staying fit. What not to love!

What did we eat for dinner after that great beach walk
Pork tenderloin stuffed with Italian sausage. Recipe from my Facetime friend, or actually her brother-in-law. I will give you her recipe because it could become a staple in your kitchen. Pork + Italian sausage + white wine = total delight! For real, this stuffed pork tenderloin is completely out of this world.

Pork tenderloin with Italian sausage
Savory pork and sausage recipe that will melt in your mouth!
Ingredients
- 2 pork tenderloins
- 2 large garlic cloves, finely chopped
- 2 shallots minced
- Olive oil
- 1/4 cup of bread crumbs
- The flesh of 1 Italian sausages (mild or strong)
- a pinch of oregano, rosemary, parsley, nutmeg and pepper
- SAUCE
- 1/3 cup white wine
- 2 cups of water
- 1 pouch of "demi-glace"
- Salt and pepper from the mill
Instructions
- Preheat the oven to 375°F. Cover a baking sheet with parchment paper.
- On a work surface, put the pork tenderloin and cut open it in a wallet. The goal is to flatten it as much as possible without going through. Set aside.
- In a very large skillet over medium heat, place the garlic, the shallots, the spices and add a good drizzle of olive oil. Cook 3 to 4 minutes, stirring. Add the sausage meat and the bread crumbs and cook for 7 to 8 minutes or until the meat is cooked. Break the meat into small pieces. Pour into a large bowl and let cool for 5 minutes.
- Add the sausage stuffing to the pork tenderloin.
- In the same skillet over medium-high heat, pour a good drizzle of olive oil and brown the pork tenderloin on all sides, 7 to 8 minutes in total. Season with salt and pepper generously. Place the pork on the baking sheet.
- In a bowl, put the ingredients for the sauce and mix. Brush the pork tenderloin with the sauce and place in the oven. Bake for 60 minutes or until the internal temperature reaches 145°F. Let stand 5 minutes before slicing and serving!

We cooked a veggie rice as a side dish and it was fantastic!
