Ingredients
- 2 teaspoons of olive oil
- 1 cup of finely chopped onion
- 2 cloves of garlic
- 1 teaspoon of curry powder
- 1 cup of diced carrots
- 2 teaspoons of dried thyme
- 3 cups of vegetable broth
- 1 cup of light coconut milk (or for the best flavor, go with full-fat coconut milk)
- 2/3 of a cup of stewed tomatoes (canned)
- 1/2 a cup of dried French lentils (you can use other kinds of lentils)
- 4 tablespoon of fresh parsley
- 1 teaspoon of garam masala
- Add salt and black pepper to your taste

Instructions
- In a medium saucepan or a Dutch oven, brown the onions, garlic, and curry powder in the oil at medium heat. Add the carrots and thyme and cook for 1 minute. Add the remaining ingredients.
